Pear Chocolate Chip Muffins with a Streusel Topping

My father had a bumper pear crop this year from one wise pear tree (I didn't want to say "old").  So, I've been able to try some recipe ideas that have been floating through my mind.

In this recipe I combined chocolate & pears - Yummm!

Printable Recipe

Muffin
1/2 cup butter (melted)
1 cup chopped pears (peeled & cored first)
1 teaspoon lemon or lime juice
2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 cup chocolate chips
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Peel, core & chop the pears & place them in a bowl and sprinkle with the lemon juice (set aside for later).  In a different bowl mix the melted butter & sugar together until combined.  Now add the eggs & vanilla extract and stir until combined (you may use an electric mixer for these steps but only mix until combined - don't over mix).  With a wooden spoon stir in the flour, baking powder & soda, salt and the cinnamon (until combined).  Now stir in the chocolate chips and the pears (the dough is thicker than most muffin batter).  Set the muffin batter aside and make the Streusel topping.

Topping
1/3 cup butter (do NOT melt this butter)
1/2 cup flour
1/3 cup brown sugar
1 teaspoon cinnamon
a little salt

In a different bowl - mix the flour, sugar & cinnamon (a few dashes of salt - especially if your butter is unsalted) - now cut the butter into the dry mixture with a pastry cutter or a fork until it is crumbly.

Grease or spray a 12 count muffin tin & spoon batter into each muffin compartment (remember the dough is a little stiff).  Now top each muffin with the crumb topping (in the picture below I showed half with the Streusel topping & half without - I finished topping ALL muffins before placing the tin in the oven).

Bake in a preheated 350 degree oven for 20 to 25 minutes or until a toothpick inserted comes out clean.  Allow to cool before removing each muffin (I took a dull knife & gently moved around each muffin before removing from the tin)
