2 Hearts Beat As One Wedding COOKIES

2 Hearts Beat As One Wedding Cookies

When many people think about the summer season they think of Weddings.  I created this recipe in my thoughts many months ago but never had the time to actually make them (and of course to make sure that they taste the way I had imagined they would taste).  Anyway, they are yummy!

Since it is now Summer I started thinking about the many weddings that I have attended in the past and I started thinking about how marriage joins two people (two hearts) into one being under God.  These cookies are a perfect symbol of that joining.  Opposites attract like these sweet treats with contrasting colors & flavors combined into one delicious cookie.  The dark dough combines chocolate chips with dark cocoa and the light dough combines cranberry & coconut.  Cranberries & coconut are from the opposite ends of the earth and merge into a perfect combination - much like many couples getting married. 

I was also reminded of the U2 song: "Two Hearts Beat As One"  - I did some research and found out that Bono wrote this fantastic song on his honeymoon - how cool is that?!!  I have included a YouTube video at the end of this post.

Printable Recipe

Dark Dough
1 egg
1/2 cup butter (softened)
1/3 cup granulated sugar
1/3 cup brown sugar
1 cup flour
1/4 cup dark cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups chocolate chips
1/2 teaspoon vanilla extract
1/4 cup coconut flour

Light Dough

1 egg

1/2 cup butter (softened)

1/3 cup granulated sugar

1/3 cup brown sugar

1 cup flour

1/2 cup coconut flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/2 cup dried cranberries

1/3 cup coconut flakes (unsweetened)



You will also need 2 heart shaped cookie cutters - one smaller than the other.



You will need two separate bowls.  Begin making the dark dough by creaming together the butter & sugars with an electric mixer.  Add the egg and vanilla extract & mix just until combined.  Add the flours, cocoa, baking soda & salt and stir by hand with a wooden spoon.  Finally stir in the chocolate chips & form into a ball - wrap in wax paper and place in the fridge for about 1 hour.

Now make the light dough by creaming together the butter & sugars with an electric mixer.  Add the egg and vanilla extract & mix just until combined.  Add the flours, baking soda & salt and stir by hand with a wooden spoon.  Finally stir in the cranberries and coconut flakes and form into a ball - wrap in wax paper and place in the fridge for about 1 hour.

Remove the dough from the fridge & roll out each dough ball separately onto a floured surface.  Roll the dough to be about 1/2 inch thick and use the larger shaped heart cookie cutter & then use the smaller cutter for the inside of each heart (see pictures above).  Continue cutting both dough colors until all the dough has been used.

Place the large heart cut cookies on a parchment lined cookie sheet and place a smaller cut heart (of the opposite color) inside the large heart.  (see pictures above and below).

Bake in a preheated 350 degree oven for about 14 minutes or until desired doneness is achieved (see picture below)

Remove from the pan and cool on a wire rack
