Leftover Turkey and Pickle Sandwich Spread

This is a great way to use up leftover turkey after Thanksgiving or Christmas.  You can use either dark or white turkey meat - I prefer the white.


2 cups turkey (already skinned and taken off the bone)
1 cup pickles (dill or sweet - I prefer my homemade Bread and Butter Pickles)
1/4 to 1/2 cup mayonnaise (depending on your taste - some people prefer a drier spread)
A half of an onion (optional) (peeled)
ground black pepper (to taste) (optional)

Place all ingredients in the food processor and "pulse" until it resembles the picture above. 

Spread on your bread of choice and ENJOY! 

This recipe can be doubled
