Fruity Cream Cheese Filled French Toast

This is a delicious & fun twist on the traditional French toast - ENJOY!

begin by making the Fruity Cream Cheese Filling:
1 package of cream cheese (softened to room temperature)
1 tablespoon cinnamon sugar
1 pear (I used my own canned pear - in other words 2 halves but a very ripe fresh pear will also work.  Mash the pear - if you are using a fresh pear then peel & core before mashing)
1/4 cup fresh blueberries (rinsed, drained & chopped)

Prepare ingredients as listed above.  In a medium bowl with an electric mixer combine all ingredients.  Set aside until later (keeping it at room temperature).

French Toast:
4 eggs
1 1/2 cups milk
1/4 cup flour
1/8 cup almond flour
2 teaspoons sugar
dash salt
1/2 teaspoon vanilla extract
1 teaspoon melted butter
a loaf of bread (sliced)
extra butter for cooking

In a large mixing bowl - break open the eggs & whisk in the milk.  Now, with a wooden spoon- stir in the remaining ingredients (except for the extra butter & loaf of bread of course).  Take a few pieces of bread and remove a small hole in the middle.  Dip the bread in the French toast batter (see picture above).  (IMPORTANT NOTE - If your bread is thinly sliced like the loaf I used in these pictures then you will only want to dip the bread in the batter.  If your bread is thickly sliced then you may soak it in the batter but ONLY for a few seconds).

Add a dab of butter in the frying pan before each piece of dipped bread.  Now, fry the bread in the frying pan.  Flip after about 1 minute (or until desired doneness is achieved).  ONLY FLIP ONCE.  Add a dollop of the fruity cream cheese in the middle of each toast after you have flipped it (while the second side is cooking) (see picture above).  Continue dipping & frying until all the batter has been used up.

Serve immediately, top with maple syrup or blueberry syrup & ENJOY!
