Sorrow Turned Into Joy (with Hymn)

Sorrow Turned Into Joy

This week has been a tough week for my family - My dear uncle passed away.


I looked up the word "grief" in the dictionary (Merriam-Webster)
Grief - deep sadness, trouble or annoyance

I have been so sad this week because of my uncle's passing but when I focus on this verse (John 16:20) - I do start to smile.  We all feel this horrible grief and sorrow at times in this life but when compared to the eternal JOY that Christians will experience in Heaven - this present sorrow doesn't seem that bad.  This eternal JOY is for anyone who believes in Jesus Christ the Son of God and for those who have accepted the gift of forgiveness through Jesus' death & resurrection.  The pain that my family is feeling still stings but I know that my uncle is in heaven right now rejoicing and fellowshipping with his parents and his wife.  I also know without a shadow of a doubt that we will see him again some day!


I wanted to share with you my uncle's favorite hymn:  "It is Well With My Soul" - in memory of Uncle Willy

 "It Is Well With My Soul" by hymnist Horatio G. Spafford 1828-1888 and composed by Philip P. Bliss 1838-1876. The history of this song is very tragic - Mr. Spafford wrote this hymn after his only son died at the age of 4.  Also, just after losing his son the "Great Chicago Fire" occurred and financially ruined Mr. Spafford.  This isn't the end of his trials - it gets much worse - after the fire the "Spaffords" decided to go to Europe but Mr. Spafford was delayed & sent his wife & 4 daughters ahead of him - the ship sank!! - I'm seriously not making this up.  All 4 daughters died but his wife was saved.  Horatio Spafford wrote these lyrics after all of those horrendous events.
Please listen to the "YouTube" video below - the words in this video for the second verse are different from the version in my hymnal.  The chorus is supposed to be in a 2 part harmony - the part that is in all caps is supposed to be the male voices and the top line is supposed to be for the female voices.

Caramelized Onion Chicken Burger Wrap with Arugula & Spicy Sour Cream

Caramelized Onion Chicken Burger Wrap with Arugula & Spicy Sour Cream

If you've never tried Arugula before I highly recommend it!  It's also very healthy!

This is another keeper as far as flavor combinations go.  Caramelized Onions, Arugula, Chicken & Sour Spice (from the spicy sour cream).

Printable Recipe

Chicken Burgers
1 lb ground chicken (I used white meat)
1/2 cup (or more) Italian Bread Crumbs
1 tablespoon Worcestershire Sauce
1/4 cup Parmesan Cheese
1 egg (lightly whisked)
1/4 cup milk
1 large onion (peeled,chopped & then sautéed in butter with 2 tablespoons of brown sugar added near the end of sautéing)
1/2 teaspoon salt (or to taste)
ground black pepper to taste
Arugula leaves (washed & drained with the stem removed)
1 package of burrito wraps

Begin by preparing the onion as detailed above.  Prepare (wash) the arugula & set aside for later.  Then combine the chicken, bread crumbs, Parmesan cheese, Worcestershire sauce, egg, milk, salt, pepper & prepared onions - stir or combine with your hands until mixed.  If it is too moist you may add more bread crumbs until the desired consistency is achieved.  Form into burger patties (depending on the desired thickness - you could form up to 10 patties from this amount).

Now fry in a frying pan until fully cooked.  (While the burgers are cooking make the Spicy Sour Cream).

Spicy Sour Cream
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon (or more - to taste) of cayenne pepper (ground)

Combine all ingredients & set aside for later (for assembly).

Assemble:  start with a wrap, add the burger (already cooked), top with a dollop Spicy Sour Cream, a few Arugula leaves, then fold the wrap around (see picture above).

Serve & ENJOY!

When furnishing our garage turned family room, I knew I wanted a round table with some chairs in there.  This way the room could double as extra dining space as well, or as desk space.  I had my eye on the Weston Crank Bistro table from Arhaus furniture for a while.

I am not sure where I got them, but they have been painted many colors...here, you see them blue, with little red peaking through, with just a touch of rust too..beauties I tell you, beauties in the rough!


This idea for a poncho shirt has been swimming around in my brain for a while. I have a shirt from Charlotte Russe that is similar to these, but is not as long as I would like it to be. I looked at the basic construction of that shirt to come up with my plan for making these.  They are easy and fast to make, and oh-so versatile. I could see them with a cardigan over or a long sleeve under in the fall and winter. Enjoy! 


Slow Cooker: Beef and Broccoli Recipe

This is hands down the best thing I have ever made in our married lives. I’m pretty sure my husband loved it more than anything else I have made. He is so sweet he will never say anything. But honestly try this out, it is delicious and super easy to make!!

Today I’m sharing a fantastic flower box with you. On Saturday my niece Laura was married. Her wonderful reception was at a vineyard here in Connecticut.
It was held outside under a tent, that was exquisitely decorated! The weather was perfect for the occasion. It felt like an early fall evening. Everything was beautiful, especially the bride!

Lemon Brownies 7
I love getting a bag of lemons given to me, our wee tree is getting there but only have 3 lemons from it so far! The next decision is what to make with them. A few months ago Pinterest was full of Lemon Brownie recipes, I was intrigued - I am a little slow on the uptake but I finally made them today and they are delicious! Lovely lemony smell filling the house and a lovely fresh alternative to our decadent chocolate brownie you will find elsewhere on my blog.


Years ago I found this awesome wood caddy at an antique store. It was stained a dark wood & I refinished it in burgundy to go in my guest bathroom to hold magazines.

Hello my lovely friends, today lets climb one more step on sewing ladder and make a Tote bag with faux leather base. Are you as excited as I am? Then, lets do it!!! This post looks too lengthy because of explanation, but trust me its super simple to sew it.



You go one morning to check the garden for any ripe produce. There's a zucchini there that is still a bit puny, but should be ready by the next day. You forget to check in the morning, but remember and look after dinner. It has gone from the size of a hot-dog to the size of your arm in less than 2 days! Yikes! What are you going to do with all that zucchini?!


Plum Tart
I had peaches on my shopping list, because it is peach season. However, the ones I found did not look fresh or ripe, and had no smell to them. I am not sure what that is all about, but like a store-bought tomatoes there was no flavor. So what to do? I went through the market sniffing fruit. The plums I could smell and looked inviting so I brought home enough make a plum tart.

I’ve said this before, I’m not a big fan of coffee – with one exception though, frappes! They were very popular during my high school years back home in Romania (15 years ago!), especially during the summer time. This is when I pretty much fell in love with this delicious iced coffee drink.
