Cranberry Surprise Sweet Potato Muffins

Cranberry Surprise Sweet Potato Muffins

Great flavor combinations make for "keeper" recipes.  Today I am featuring two of my favorite Fall flavors: sweet potatoes and cranberries.  This recipe is perfect for breakfast on the day after Thanksgiving because you can use leftover whole cranberry sauce (the surprise middle).

1/2 cup butter (melted & cooled to warm)
1/2 cup sweet potato (baked, cooled & skinned)
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 2/3 cups flour 
whole cranberry sauce (for the middle)(already made and cooled)

Begin by preparing ingredients as listed above (baking sweet potato, melting butter etc) (I usually use left over baked sweet potato from the night before).  Beat the eggs and sugar just until blended.  Add the butter, extract & sweet potato & beat again - just until combined.  Now, with a wooden spoon - stir in the dry ingredients (you may sift the flour, baking powder & salt - but that is not necessary).  Continue stirring until all of the dry ingredients has been mixed in completely (Don't over stir)(see dough consistency below).

Divide the dough into 2 equal portions.  Spray or butter a 12 count muffin tin.  Take half of the dough and drop about 1/8 cup portion into each muffin space (you will use the entire half portion of the dough).  Place a dab of cranberry sauce on top of each dough portion in each muffin space (see picture below).

Now, take the remaining dough portion & drop another 1/8 cup (or so) portion of dough on top of the cranberry blob.  Using your fingers (you might need to dampen your fingers with water first) make sure that the dough sides around the cranberry are touching the bottom dough to make a seal) (see picture below - the 2 muffins on the left have been covered with the second portion of dough).

Walnut Crumb Topping

1/3 cup butter (softened)
1/2 cup flour
1/3 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup chopped walnuts

Stir the flour, sugar and cinnamon together in a medium sized mixing bowl.  With a pie-cutter tool - cut the butter into the flour mixture until it is crumbly.  Finally, with a wooden spoon, stir in the walnuts (the crumb topping should resemble the picture below).

Sprinkle the crumb topping onto the dough in each muffin space (see two pictures below) (sprinkle so that all the topping is used).

Bake in a preheated 400 degree oven for 15 minutes (or until a toothpick inserted comes out clean.  IMPORTANT - you will need to insert the toothpick at the edge going diagonally down into the middle underneath the cranberry)

Cool for 10 minutes - remove from muffin tin and continue cooling on a wire rack.

Serve or place in the cupboard for later.

Wisdom From Heaven #6 - SUBMISSIVE

This is the sixth post in the series called "Wisdom from Heaven".  In this series we will be studying James chapter 3, which details how to put heavenly wisdom into practice in our everyday lives.

Today we are focusing on SUBMISSIVE heavenly wisdom.

Let's begin by defining:

submissive - ready to conform to the authority or will of others;  meekly obedient or passive.  Compliant, yielding, malleable, accommodating, obedient, dutiful, manageable.

Today's subject is going to be controversial because of the horrible way that the world has twisted the true meaning of the word "submit" or "being submissive."

There are three main types of submission and also a priority:
1.  Submit to God's authority
2.  Submit to our family's authority (Parents/Spouse)
3.  Submit to Ruler's authority

The world views being submissive as having to give up all freedom and safety.  However, submitting to God is the exact opposite - God protects us and gives us eternal life.  Submission to God will NEVER lead to abuse, terror or despair.

"Because God has said,
'Never will I leave you;
never will I forsake you.' "
Hebrews 13:5

In the Scripture passage below, you will notice the different types of submission required from a wife versus a husband.  The wife submits to her husband like the church submits to Christ, and the husband loves and protects his wife to the point of "giving himself up for her".  These are different roles and different types of submission but both the wife and husband are of equal value to God.
Notice the clarification in the second Bible verse below - the underlined part "as is fitting in the Lord."  A wife should never submit herself to be physically, mentally or emotionally abused by her husband - that is NOT "fitting in the Lord".

"Now as the church submits to Christ, so also wives should submit to their husbands in everything.  Husbands, love your wives, just as Christ loved the church and gave himself up for her."
Ephesians 5:24-25

"Wives, submit yourselves to your husbands, as is fitting in the Lord."
Colossians 3:18

Finally, submitting to the rulers in authority (read Bible verse below).  Here again there is a clarification - "be ready to do whatever is good."  Remember when Jesus overturned the tables of the merchants who were selling in the Temple? (Matthew 21:12 & 13).  That's why there is a priority to our submission.  God first.  Government/rulers are third in priority.  (click HERE to read: "What Happens When Those in Authority Ask You To Go Against God's Law?")

Being submissive to God is the safest and only way to live.  He has plans to prosper us and not to harm us - we must trust and obey God every second of everyday.
