Blueberry Bread with Lemon Frosting-Glaze

Blueberry Bread with Lemon Frosting-Glaze

For many years now I have been able to find delicious fresh blueberries at my local fruit and vegetable market in the middle of the winter (yes, they are imported from South America but I have been impressed by their quality and freshness).

Instead of baking the typical blueberry muffins I decided to create a blueberry bread recipe.  The flare to this recipe is the lemon glaze/frosting!

Blueberry Bread
1/2 cup butter (melted & cooled to lukewarm)
1 egg
3/4 cup milk
1 teaspoon lemon zest
2 cups flour (you may need an extra 1/4 cup flour if the blueberries are extra juicy)
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt (1 teaspoon salt if you are using unsalted butter)
1/4 cup blueberry jam (click HERE if you would like to learn how to make your own)
1 cup blueberries (washed, rinsed & crushed)

Begin by preparing the ingredients as listed above (washing & crushing the blueberries, melting the butter).  In a large mixing bowl and using whisk - mix the butter, egg, blueberry jam, sugar and milk just until combined.  Now using a wooden spoon mix in the zest, flour, salt and  baking powder.  Stir until combined.  Finally, stir in the blueberries (dough should look like the picture above).

Spray/butter a loaf pan and pour all of the batter into the pan (see picture above).

Bake in a preheated 350 degree oven for 35 to 45 minutes (or until a toothpick inserted in the middle comes out clean).

Remove from the oven & cool on a wire rack for at least 10 minutes before removing the loaf from the pan.  Gently slide a knife around the edge of the bread before inverting the pan to remove the loaf.

Lemon Frosting-Glaze
1/8 cup butter
2 tablespoons lemon juice
1 1/4 cup powdered sugar
Melt the butter & stir in the lemon juice.  With an electric mixer blend the powdered sugar into the liquid mixture 1/4 cup at a time. 
IMPORTANT:  You cannot add the Frosting-Glaze until the bread is completely cooled!!
Spread the frosting on top of the totally cooled bread (see picture below).
