Jerusalem Artichokes (Sunchoke or Sunroot)
Everyone seems to be talking about the Jerusalem artichoke as of late. My husband is always ahead of the game and planted a couple sunchokes last year. Harvesting in the Spring is supposed to make them more flavorful which is why we just harvested them a couple weeks ago.
In my opinion there are three good reasons to plant Jerusalem artichokes:
1. They are very healthy
2. They are very productive
3. They are very easy to grow
Jerusalem artichokes are part of the sunflower family, which is why they are also called "Sunroot" or "Sunchoke" (click HERE to view some of the sunflowers that I have grown over the past 14 years).
The main healthy reason to grow sunchokes is because they are rich in inulin which is a prebiotic fiber (this helps create healthy bacteria in the intestinal system).

In the picture below you will see 2 dried stalks. From just two plants we harvested everything that you see in the title picture of this post (first picture above).
They are harvested similar to potatoes with a pitchfork (see pictures below).
They are so much fun to harvest!!
Since the sunroot is new to me I will be experimenting with different ways to use them and share the successful recipes with you sometime in the future.
