The Basics - Whole Grain Cheese Biscuits

 Whole Grain Cheese Biscuits

These biscuits are so easy to make and so delicious - I love the "grainy" taste!
These biscuits are great dipped in/or served with the following meals/recipes:

Garden Preserved Chili
Chicken Corn Chowder
Garden Preserved Beef Stew

I make biscuits for many different recipes - savory & sweet - checkout the following recipes that use a variation of these biscuits:

Strawberry Shortcake
Maple'n Bacon Biscuits with Poached Eggs & Cheese
Blueberry Lemon Shortcake

1/2 cup butter (cold from fridge - not frozen)
1/2 cup whole wheat flour
1/4 cup 10 grain cereal
1 1/4 cup unbleached white flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup shredded cheddar cheese
3/4 cup milk

In a large mixing bowl combine the wheat flour, cereal, white flour, sugar, powdered sugar, salt & shredded cheese & stir.  Now cut in the butter with a pastry cutter until the dough resembles the picture above.  Now stir in the milk & with then with your hands knead the dough just until all of the dry ingredients is blended together.  Form the dough into a cylinder & slice into about 9 or 10 puck sized slices (see picture below).  Place on a parchment lined cookie sheet & bake in a preheated 450 degree oven for 10 to 12 minutes or until desired color is achieved.

Themed Blog & Shop Hop - "BLUE Skies"

I'm so glad that you stopped by!

For those of you who are not familiar with "Hops" (a.k.a. Be Strong In The Lord


"Finally, be strong in the Lord and in his mighty power.  Put on the full armor of God so that you can take your stand against the devil's schemes.  For our struggle is not against flesh and blood, but against the rulers, against the authorities, against the powers of this dark world and against the spiritual forces of evil in the heavenly realms."  Ephesians 6:10-12
 Today's Bible study starts a new series on "Becoming A Christian Soldier." - Now, I have to be very clear - I am NOT talking about becoming a physical soldier and I am NOT saying that you should go out and physically fight (although I appreciate and respect anybody who has served or is serving in our army, navy or air force) - what I'm talking about in this series is on a spiritual level.  If you look above in verse 12: "For our struggle is not against flesh and blood..." that is the exact point - we are not talking about a physical fight and we are not talking about physical training.  Becoming a Christian soldier is all about our relationship with God;  about our spiritual training and about our spiritual self.

The first thing that we need to know and understand is: "Who are we fighting?"  and
"Who is our enemy?"
The answer is Satan - the devil - and all of his demonic subjects are our enemies.
This enemy comes in many different forms........as we read on in verse 12:  "...against the rulers, against the authorities, against the powers of this dark world and against spiritual forces of evil in the heavenly realms."  The secular world is against Christians.  Look at what's on TV and how Christians are portrayed on TV, ,in movies or on the Internet - we are always depicted as crazy hate-mongers who force our beliefs down people's throats - Nothing could be further from the truth!!!  I'm not saying that Christians are perfect but we all strive to live like Christ lived and we strive to love everyone.  What the world doesn't understand is that you can still love someone even if you don't agree with them.  I believe that these "worldly powers" and "spiritual forces" have even infiltrated the mainstream of how we think.  Take for instance the "Political Correctness Movement" - what one group has this Movement totally ignored?......That would be the Christians.  Supposedly it is "Politically incorrect" for me to say "Merry Christmas", yet I have to hear my God's name used in vain many times a day by strangers, movie stars, neighbors, politicians and even teens!!!!  This P.C. Movement is so offensive to me as a Christian.  It makes no sense - the truth has been totally twisted!  It is these kinds of sneaky evil forces that we are dealing with.
Do not fear - our God is more powerful than all of Satan's forces!  After all - don't forget that Satan is a fallen angel and was cast out of Heaven.  That is why, in these verses above it starts with: "Finally, be strong in the Lord and in his mighty power."  Since Jesus died for our sins we now have a direct line to God's strength through prayer.  God is in total control of every part of our lives.  By drawing on His power we can face anything that the enemy throws our way. 
In the weeks to come we will learn how to "put on the full armor of God so that you can take your stand against the devil's schemes."

Today's Flower Feature is "Monet's Watercolor Rose".
This is another one of my favorite roses.  In certain lights - the petals resemble paper that has been painted with watercolors - a gentle gradation in color.  If you've ever painted with watercolors before then you'll know what I'm talking about - when you place a paintbrush with a dab of watercolor paint onto a moist piece of watercolor paper - then the magic happens!!  That wonderful growth of color as it spreads onto the moist parts of the paper!  That's what each petal looks like to me - a Monet masterpiece in each petal!

Blueberry Lemon Shortcake

Blueberry Lemon Shortcake

Strawberries aren't the only fruit that makes a simple Shortcake luscious! - My Blueberry Lemon Shortcake is a must try!

Shortcake
1/2 cup butter (room temperature)
2 cups flour
1 tablespoon granulated sugar (plus 2 more tablespoons for the top of the shortcakes)
1 teaspoon lemon rind
1/2 teaspoon vanilla extract
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
In a medium mixing bowl, stir together the flour, sugar, salt, baking powder & lemon rind.  Now, blend in the butter with a "pastry cutter" until it resembles a streusel topping (or nickel size chunks).  Stir in the milk and knead with your hands until all of the dough forms a ball.  Roll the dough into a cylinder and slice into puck size shortcakes (see picture above) - you should have about 8 to 10 shortcakes.  Finally dip each shortcake top into some sugar & place non-sugared side down on a parchment lined cookie sheet.  Bake in a preheated 450 degree oven for 10 to 12 minutes (or until desired golden brown color & desired "doneness" is achieved)
Blueberry Topping
3 cups blueberries (fresh, washed & drained)
1/8 cup of lemon juice
1/4 cup granulated sugar

Place the blueberries in a mixing bowl & lightly mash them with a potato masher - just until they have slightly popped open.  Add the lemon juice & sugar and stir until combined.  Allow this topping to sit at room temperature for about 20 minutes.
Whipped Cream
1 cup whipping cream
2 tablespoons powdered sugar
2 tablespoons blueberry jam or blueberry syrup (optional)
With an electric mixer - whip the cream until you start to see it come together.  Add the sugar before stiff peaks form in the whipping cream.  Continue to whip until the sugar is dissolved and for an extra special whip cream - add some blueberry jam or blueberry syrup after the sugar has been combined.  Continue whipping until stiff peaks have formed.
Assembly
Allow the shortcakes to cool.  Then, place a shortcake on each plate (if you like your shortcake to soak up the blueberry juices then you may break the shortcake into a few pieces first), pour about 1/3 cup of the Blueberry Topping on top of each shortcake and finally top with some whipped cream.  ENJOY!!
