Garden Fresh Strawberry Applesauce

There are many different varieties of applesauce that I have shared on this blog:
This year, since I had such a wonderful strawberry crop (click HERE to view "Strawberry Stages:  From Planting to Eating"), I decided to share my strawberry applesauce recipe.

I knew that summer apples would not ripen at the same time as strawberries.  So, I processed some strawberries from my garden while they were in season and froze them until the apples were ripe.  Summer apples are in prime season right now!

Strawberry Applesauce
1 cup mashed strawberries (rinsed, hulled & mashed/chopped.  I used frozen - in this case thaw before making applesauce)
5 cups apple puree (What I call "apple puree" are apples that have been cooked down, cooled and then processed through a food strainer -  click HERE to view how to use the food strainer)
1/2 cup to 3/4 cup sugar (depending on you desired sweetness)
Juice from 1/2 a lemon
1/2 teaspoon ground cinnamon

In a large size saucepan, combine the mashed strawberries and apple puree. (see pictures below).

Stir in the sugar, lemon juice and cinnamon.

 Bring to boil and then turn down the heat to low and simmer for about 30 to 40 minutes - stirring often (see picture below).

Scoop off the foam (as seen on the edges in the picture above) until it resembles the picture below.

While the sauce is simmering you should gather your canning jars, lids and rings (you will need about 3 pints, or 5+ jelly jars). (see Canning Basics - Jar Sizes). Also, gather all other canning supplies: (see Other Canning Supplies)  Start the water boiling for Jar sterilization: (see Sterilizing Jars & Lids) .   Taste the applesauce - you might want to add more sugar.

By now your jars should be sterilized and ready to be filled. Take the jars out of the boiling water (I use my jar remover and make sure that the water is drained out of each jar).  Ladle the applesauce into each jar making sure not to go above the bottom of the threads on the jar.  Continue filling until all of the applesauce has been used up.  Wipe the rim of each jar with a damp cloth making sure that any sauce residue is gone (any residue left on the rim can stop the jar from sealing).  Place a sterilized lid on each jar and then tighten a ring on each jar.

Place all jars in a "Water Bath Canner" and process (boil) the filled jars for 15 minutes (make sure that the water level in the Canner is 1 inch above the tallest jar)
After boiling for 15 minutes, remove the jars and place them on the counter or table to cool (I always place them on a cloth because there have been a few times when a jar cracked and then the contents oozed out making a mess - the cloth will help if that happens). You will hear the wonderful popping sound of your jars sealing.

Allow the jars to cool overnight and do not move until then.

TREES #6 - FIGS:  From Genesis to Revelation

In today's continuation of the trees series we will be focusing on Figs and the "Sycamore-fig tree".  This is Part#6 on God's glorious trees - "FIGS:  From Genesis to Revelation".

Here are some symbols or purposes of the fig tree in the Bible:
- to hide something
- abundance
- joy
- peace
- clarity/awakening

I have to admit that I have never eaten a fresh fig before.  The only "fig" I've ever eaten is in the popular cookies.
I did a little research and found that figs can possibly be used to prevent cancer, they are good for weight control, heart disease, diabetes and more (I am NOT giving medical advice, I am simply sharing the information that I found in my research - see disclaimer link at the end of this post).

Let's begin in Genesis - When Adam & Eve were awakened to their nakedness (after they had eaten the forbidden fruit), they covered themselves with fig leaves.  Fig leaves are very large and flat.

Remember Zacchaeus?  Let's refresh our memories:

In this Scripture (see above), we see: 
clarity (clarity & repentance - Zacchaeus gave half of his worth to the poor after seeing the Truth about Jesus Christ)
joy ("Zacchaeus at once welcomed him gladly")
peace (the townsfolk were shocked that Jesus would stay at the house of a sinner. "For the Son of Man came to seek and to save the lost") 


A Thousand Years of Peace

Here, the fig tree is a symbol not only of abundance but also peace "you will invite your neighbor."

These verses in Micah are some of my favorite in the Old Testament (see below).
During 1,000 years of peace:
- there will be no wars
- EVERYONE will live in peace
- and EVERYONE will live in abundance
- there will be NOTHING to fear

Finally, we reach Revelation.
If you are not familiar with The Book of Revelation, it details "end time" prophesy.  That is (I believe) the "end time" for the evil doers and NOT the end times for God's children (that's us).  Revelation is not a book where you can pick out one verse and understand it fully - we must understand the context.  Near the beginning of Revelation, before this chapter, we learn that we are sealed and protected from the things that we are reading about in chapter 6 (see below).

The fig tree is an important tree in the Bible.  May our Heavenly Father richly bless you with His abundance, peace, joy & clarity!

Garden Fresh Strawberry Rhubarb Pie RECIPE

We had a superb strawberry season this year!  And, a fairly decent rhubarb crop also (rhubarb is still coming in off and on all season).  Strawberry, rhubarb pie is one of my favorites and I realized that I haven't shared that with you yet!

Begin by making the crust (click HERE to learn how to make your own crust).  You will be making a double pie crust (at the bottom of the above crust post).  Divide into two equal sections and roll the bottom out and place in a pie dish.  Roll out the top and set aside until later.

Rinse the strawberries & rhubarb.  Then, hull the strawberries (remove the green top and the stem), and chop.  Next, chop the rhubarb (first remove the leaf and the bottom jagged part).

PRINTABLE RECIPE


Strawberry Rhubarb Filling
1 1/3 cup sugar
1/3 cup flour
2 cups chopped strawberries (see preparation instructions above)
2 cups chopped rhubarb (see preparation instructions above)
1/2 teaspoon lemon zest
pinch of salt (only if your butter is unsalted - otherwise skip this ingredient)
2 tablespoon butter for dotting
cinnamon sugar for sprinkling on the top crust

Prepare the strawberries & rhubarb as listed above.  In a large bowl combine the fruit and lemon zest (see picture below)

Add the flour & sugar and stir until combined.  Pour this mixture into the bottom (already prepared) pie crust and dot with butter (see picture below).

Cover with the top pie crust and flute the edges.  Then cut a vent hole (I drew a strawberry as a very large vent hole).  Then sprinkle the top with cinnamon sugar (see 3 pictures below).

Bake in a preheated 425 degree oven.  It will be baked for 50 plus minutes (or until desired brown color is achieved) However, the edges will burn.  For the last 10 minutes place a foil doughnut  around the fluted crust (see picture below - I should have placed the foil on for the last 15 minutes instead of only the last 10 minutes because the edge got a little dark.  Thankfully it was not burnt tasting but that can happen quickly if you're not careful).

Remove from the oven and allow to cool on a cooling rack for about 30 minutes (or more).
