5 Irish-ish Recipes

I'm not of Irish descent and I've never had the privilege of visiting Ireland but everything that I've ever seen in books or on TV about this beautiful country & amazing people makes me a little jealous.  I guess that I'm an Irish-wanna-be.  That's why the following 5 recipes are "Irish-ish" - although they are not created by an Irish person - they are either green in color, have potatoes as the main ingredient or is historically an Irish dish (Jiggs Dinner).

Decorating the Twin Cupcake CAKES

My mom made the cakes using the cake pan seen in the pictures below.  One cake was Vanilla for Paige and the other cake was Chocolate for Meghan.

1.  After baking and cooling the cake - begin by leveling off each half so that the top of the cupcake fits nicely on the bottom.

2.  Make your frosting (we made a butter cream frosting - not to be confused with pure butter cream).  Spread the frosting on the bottom so that the top will stay in place.

3.  Dye some of the frosting (if desired) and begin decorating or piping the bottom portion.

4.  Gently place the top onto the previously frosted bottom.

5.  Now frost the top (we purposely made it look rough so that it really looked like a cupcake)

6.  Finally top with fondant shapes & designs.  I dyed my own fondant & then rolled it out & free hand cut the flowers and leaves - if you don't feel confident "free hand cutting" then make a pattern on wax paper first to use as a guide when cutting.

Making the "Cupcake CANDLES"

I'd like to thank "Crafty Candles" for providing such a fun party and a perfect Candle Teacher!


1.  We began with the pouring of the hot wax into large cookie trays (there were certain safety rules - during this step the children kept their hands firmly clasped behind their backs)

2.  After a few minutes of cooling - the children were each given a large spoon with which to move & fluff up the cooling wax making it resemble frosting.

3.  A few minutes more and they were able to handle the wax fluff.  Each child was given a wax cupcake base that had previously been made by the store.  In this step the forming of the cupcake top begins - making sure that the wick is straight.

4.   Finally the toppings!  There were these pre-made realistic looking fruit pieces:  raspberries, cherries, strawberries, blueberries & blackberries - (they looked yummy!)

Candles, Cupcakes, Twin Nieces & a Party

A few weeks ago my 2 beautiful twin nieces Meghan & Paige turned 8 years old - how time flies!!  I was so blessed to be able to attend & help out with this birthday party.

My sister is such a cool mom - she created a themed party - the theme was CUPCAKES.

The location of the party was a local candle shop where all of the young party attendees made a Vanilla scented Cupcake Candle.  After the candle making and the gift exchange we were all treated with twin Cupcake Cakes!!

A wonderful time was had by all!!

Later on today I will share with you the details of making the candles and of decorating the cakes.

March GREAT BLOG TRAIN Results


The third GREAT BLOG TRAIN was a blast! - We all safely reached our destination. It was a wonderful trip with 58 boxcars!! I'd like to thank all of you for travelling with us and I hope that you all had a wonderful time!

God's Thoughts Are NOT Our Thoughts


" 'For my thoughts are not your thoughts, neither are your ways my ways,' declares the Lord.  'As the heavens are higher than the earth, so are my ways higher than your ways and my thoughts than your thoughts.  As the rain and the snow come down from heaven, and do not return to it without watering the earth and making it bud and flourish, so that it yields seed for the sower and bread for the eater, so is my word that goes out from my mouth:  It will not return to me empty, but will accomplish what I desire and achieve the purpose for which I sent it.  You will go out in joy and be led forth in peace;  the mountains and hills will burst into song before you, and all the trees of the field will clap their hands.  Instead of the thornbush will grow the pine tree, and instead of briers the myrtle will grow.  This will be for the Lord's renown, for an everlasting sign, which will not be destroyed.' "  Isaiah 55:8-13

To me these verses are all about Trust.  When we try to figure out why something is happening in our life or what purpose God could possibly have in allowing something  to occur - we are actually trying to think on God's level.  We do not know the future but God does.  We do not have a plan but God does.
- God's thoughts are not our thoughts 
- God's ways are not our ways
- and God's timing is not our timing
Look at the poetic way that God's provision is described:  "As the rain and the snow come down from heaven, and do not return to it without watering the earth and making it bud and flourish, so that it yields seed for the sower and bread for the eater....."  - This all takes time.  God's plan is not in our modern timing of instant gratification.  God has a purpose & an exact time: ".....so is my word that goes out from my mouth:  It will not return to me empty, but will accomplish what I desire and achieve the purpose for which I sent it."  We need to trust our heavenly Father in every aspect of our life - He has the detailed plan and knows exactly what we are going through and why it is necessary.  We might not learn the reason why we are put into certain situations until we reach the pearly gates of heaven! - but we still must walk in faith knowing that God is in control.
I just love this descriptive verse:  "...the mountains and hills will burst into song before you, and all the trees of the field will clap their hands."  Have you ever watched trees during a windy storm? - It really does look like they are clapping their hands! (I'm not a tree hugger but if you look closely you might even see a smiling face in the knots of the tree trunk - God's creation is amazing!!) 
I believe that the "thornbush" symbolizes "thorns in our flesh" like weaknesses and illnesses and the "briers" symbolize the hardships and difficulties in our life.  Only God can turn our thorns into healthy strong pine trees (or turn our illnesses into health).  And only God can turn our briers into smooth and prosperous myrtle (or turn our hardships into comfort). 
We need to live one day at a time and one decision at a time - always following God's plan in God's timing.

Smoothie Saturday #8 - Peachy Keen Kale

A while ago I bought - The "NutriBullet". Since then I have been creating many smoothie creations.

Today is the seventh "Smoothie Saturday" where I will share one of my smoothie experimentation.

In this recipe the healthiest ingredient is Kale.

Kale - is high in vitamin C, vitamin A, calcium, potassium, Omega-3 fatty acids, vitamin E, Iron and much much more.  Kale lowers cholesterol, is a good source of fiber and protein and is said to have anti-cancer properties. (again - I'm not a doctor - please see my "disclaimer" at the bottom of this post).

CAUTION:  Kale contains chemicals called "goitrogens" which inhibit the absorption of iodine - so if you have "hypothyroidism" you will want to keep this in mind when eating Kale.

1 large peach (washed & pitted - if you don't like the skin then you may peel)
1 small apple (washed & cored)
3 tender Kale leaves (washed & deveined)
1 teaspoon flax seeds
1 tablespoon walnuts
1 scoop vanilla whey protein powder
1/2 cup kefir (or yogurt)
1/4 cup water (if it is too thick)

Begin with the smaller "NutriBullet" container and use the "nut & seed" blade to blend & chop the walnuts & flax seeds. Now place the remaining ingredients (including the processed seeds & nuts from the first step) into the larger "NutriBullet" container and use the "smoothie" blade. Blend for about 30 seconds (or until fully blended).
ENJOY!!
IMPORTANT: All of my smoothie recipes on this blog are measured for the "NutriBullet" and are a single serving - if you have a different kind of blender that has a larger capacity then you may increase the amount of ingredients according to your desired smoothie needs. The ingredients in this recipe measure close to the max line of the NutriBullet.
