Garden Fresh Homemade Apricot Ice Cream
After seven years our apricot tree is finally producing an amazing amount of fruit! Even though the squirrels were peeling away the fruit to get at the pit, we still had plenty of apricots untouched by squirrels to enjoy. This ice cream recipe uses the apricot syrup/sauce that I shared with you last week (click HERE to view "Apricot Sauce/Syrup RECIPE" )

Even though the squirrels were peeling away the fruit to get at the pit, we still had plenty of apricots untouched by squirrels to enjoy. The apricot texture adds to the creaminess of this ice cream recipe.
3/4 cup milk
1 1/2 cups heavy whipping cream
2/3 cup sugar
1 teaspoon vanilla extract
1 teaspoon vanilla extract
dash of sea salt or kosher salt
In a large mixing bowl combine the cream, milk, sugar, vanilla and salt. Whisk until the sugar is dissolved (do not whip - just whisk gently). Then stir in the apricot syrup/sauce. Stir until the apricot sauce is dispersed throughout the liquid (see pictures below):
Chill the apricot mixture in the fridge for about 1 hour. Remove from the fridge & add to your ice cream maker (see picture below) (follow the manufacturer's instructions).
Remove from the ice cream maker.
Serve immediately. Place the remaining ice cream in the freezer and
ENJOY!!!

Apricots and blackberries make a wonderful flavor combination. Instead of topping your ice cream with the traditional maraschino cherry, try topping it with some garden fresh blackberries (see picture below):
