TWENTY Top 20 - ZUCCHINI



This is the fourteenth post in my blog series called "TWENTY Top 20".  We are celebrating 2020 (and celebrating this unique decade) with this series.  In this series there will be a total of twenty different categories featuring the top 20 previously published posts on that topic.  Once or twice a month I will feature a new category.  

Every year, by the end of August I am zucchini weary.  My husband calls zucchini "The carp of the garden" (hahaha).  It's true - zucchini seem to be never ending and (if left unpicked for a few days) they will grow as large as carp.  Today I will be featuring some of my favorite zucchini recipes.

  1. I have never heard of anyone refer to zucchini as "light and dark". The yellow is usually called "summer squash". Last year I planted two plants each of zucchini and summer squash and I had so much zucchini and summer squash that I froze a ton. I still have a freezer full. I decided not to freeze any this year and just use it up, but I also only planted one plant each. It's been much more manageable to use up. Do you know "Half Baked Harvest"? She's on Instagram and she has a website. She has the best zucchini recipes. I have also found, that you can throw zucchini in any dish, including spaghetti sauce, and never know it's there. ha ha. I throw it in everything just to get rid of it.
